Chia seed pudding makes a delicious and nutritious breakfast that hardly requires any prep time at all. Just mix the ingredients together, mix them up and let it all sit in the fridge for at least 2 hours. Breakfast or snack will be ready in no time! The kids and I absolutely LOVE chia seed pudding and when I recently found a great deal on strawberries, knew that I wanted to use some for a healthy breakfast of strawberry chia seed pudding. Chia seeds are rich in fiber, protein and most importantly, omega-3 fatty acids. The kids know that chia seeds are "good for their brains" and that we pretty much eat them daily.
